Some common veggies you might encounter at farmers markets across Alaska might be unfamiliar. Using your Farmers’ Market Nutrition Program benefits to purchase these is a good way of trying something new that might become a family favorite!

Daikon – a type of radish that helps with digestion. To prepare, cut off both ends and peel the outer skin and then chop up into pieces or slices.
Leek – like an onion, leeks have great anti-inflammatory benefits. Cut off the ends and separate the stalks to wash thoroughly. Then you can cut into any desired shape to cook.
Bok Choy – apart of the cabbage family, bok choy has amazing vitamins and calcium. Separate the layers to wash and either cook the stalks whole or cut them into smaller bites.
Ask the farmer their favorite way to have them for new ideas!
