Roasting eggplants from my garden to go in the freezer for the winter months. Mainly used to make an eggplant spread (aka )
Also roasting some garden peppers for a fresh roasted red peppers salad for dinner 2night!

Trying to save as much as possible from the garden before the weekend freezing temperatures

That satisfaction, appreciation and gratefully heart you have knowing you planted the plum tree on the homestead 4 years ago to be able to pick the Plums today and turned them into the most amazing jam. ..actually more of a butter!
