Creamy Dark Chocolate Mousse

Ingredients
4 ripe avocados
¼ cup light coconut milk
4 tablespoons unsweetened dark cocoa powder
3 tablespoons honey
2 ounces dark chocolate (72% or higher), melted
2 teaspoons vanilla extract
1/8 teaspoon salt
10 large strawberries, sliced

Instructions
Remove avocados from the skin (remove pit as well) and place in a food processor. Blend until creamy.
Add remaining ingredients. Blend until pureed. Scrape down the sides when needed.
Place in refrigerator for 1 to 2 hours.
Serve mousse in individual bowls. Top with strawberry slices or layer the mousse and strawberries. Garnish with a sprig of fresh mint (if desired).

This looks delicious...and healthy!

Green Beans with Miso-Sesame Sauce

Ingredients
2 tablespoons plus 1 tsp. sesame seeds
1/4 cup unseasoned Japanese rice vinegar
2 tablespoons white miso paste
1 pound long, slender green beans, stem ends trimmed
1 teaspoon coarse salt

Preparation

1. Grind 2 tablespoons of the sesame seeds in a spice grinder or with a mortar and pestle until they reach a powdery consistency. Combine ground sesame seeds, vinegar and miso in a small bowl and whisk until well blended.

2. Bring a large saucepan three-quarters filled with water to a boil. Add green beans and salt; boil until green beans are tender to the bite, 6 to 8 minutes. Drain well. Place green beans in a shallow serving bowl and spoon sauce on top. Garnish with remaining 1 teaspoon sesame seeds.

Spinach-Artichoke Stuffed Mushrooms

Looking for an easy-to-prepare, crowd-pleasing appetizer to kick off your Thanksgiving feast or holiday party? Try our spinach-artichoke stuffed mushrooms. These tasty starters are packed with flavor yet light on calories — so you and your guests can enjoy them without the guilt.

2 tablespoons olive oil, divided in half
1 medium garlic clove, minced
12 small brown mushrooms, stemmed, gills removed
Freshly ground black pepper
2 ounces cream cheese
4 ½ teaspoons light mayonnaise
1 teaspoon thyme, divided
5 ounces frozen, chopped spinach, thawed and squeezed dry
5 ounces canned artichokes, drained and chopped
3 tablespoons fresh panko breadcrumbs
3 tablespoons grated Parmesan cheese

1. Preheat oven to 450°F.

2. In a small bowl, combine 1 tablespoon olive oil and about two-thirds of the garlic.

3. Brush bottom side of the mushroom caps with the garlic oil. Sprinkle the mushrooms with pepper.

4. Arrange the mushrooms oiled side up on a rimmed baking sheet and roast until tender (about 6 minutes).

5. In a medium bowl, mix the cream cheese, mayonnaise and ½ teaspoon thyme. Stir in the spinach and artichokes.

6. In another medium bowl, combine the remaining 1/3 garlic clove, 1 tablespoon of olive oil and ½ teaspoon of thyme with the breadcrumbs and cheese.

7. Spoon the artichoke mixture evenly into the mushroom caps and sprinkle with the breadcrumb mixture.

8. Bake until the crumbs are golden brown (about 6 to 8 minutes).

Servings: 4 (Serving size: 3 mushrooms). Calories per serving: 72; fat: 5g (saturated fat: 1.3g); protein: 3g; total carbohydrates: 6g; sodium: 167mg.

Tips for adding color and nutrition to your meals.
- Red fruits and vegetables, such as tomatoes, strawberries and red beans, are packed with vitamin C, vitamin A, potassium and antioxidants.
- Yellow/orange fruits and vegetables, including carrots, peaches, squash and pineapple, are also loaded with vitamin C, vitamin A and potassium. They can also boost the immune system and enhance vision. Mushrooms, bananas, onions and other white fruits and vegetables are good for the heart and help to control cholesterol levels.
