Obviously, you can only have the gluten-free options. Beyond that, here are a few more tips (there are more!)

-make sure all items have their own serving utensil
-go when opening if possible
-only pick from untouched sides of the bin
-don’t pick items next to other gluten containing option if possible

If this is too far out of your comfort zone, ask for fresh food from the back. The majority of the item from the buffet already have untouched replacements from the back. I’ve done this many times with I get there around lunch and the food I want has been touched from all angles or if in general, the buffet line looks messy.
