Seattle chef Makini Howell spent two years on tour with Stevie Wonder as his personal cook. She came off that tour, in her words, as a chef.

Howell is one of the most recognised plant-based cooks on the West Coast. For years she ran Plum Bistro, the Seattle vegan restaurant that closed in 2025. She now runs her own tofu brand, Makini’s, selling Southern fried tofu and tofustrami out of the city. Her cookbook Simple Goodness came out in 2024 with a foreword from Wonder himself. He wrote that Makini’s cooking will excite and satisfy, and that her ways should be passed on from generation to generation.

Wonder has followed a plant based diet for health reasons for most of his life. On tour that meant Howell cooked everything. Breakfast, lunch, dinner, snacks, beverages and teas. She made French toast, scrambles, tofu satay, grains and legumes. She experimented with tofu bacon, marinating the tofu in dressings built from vinegar, stone-ground mustard and fresh herbs.

Speaking to Milk Street in 2022, Howell said that cooking every day for one person taught her what variety and a satisfying meal actually look like. By the time she left the tour, she said, she could teach anyone to be vegan for the rest of their life.

Seattle’s vegan food scene was shaped in part by what happened on the Stevie Wonder tour bus. That is not an exaggeration. That is who taught the teacher.

It annoys me when Gardein or Morningstar makes something new and it's not vegan 😫😂
I'm sure this could have been easily made vegan instead of vegetarian but they chose not to.

If drinking a dog's milk feels strange, why doesn't drinking a cow's milk?

It's a question worth sitting with.

We've been taught that drinking cow's milk is perfectly normal, while the thought of drinking milk from a dog, cat, or almost any other animal seems bizarre.

But biologically, there's nothing that makes cow's milk uniquely intended for humans.

A mother cow produces milk for the same reason a mother dog does: to nourish her babies.

The difference isn't biology. It's what we've grown accustomed to.

And behind every glass of dairy milk is an industry that depends on cows becoming pregnant, giving birth, and having their calves separated from them so their milk can be collected for human consumption.

None of this is necessary for us to enjoy milk in our coffee, cereal, or favorite recipes. Today, we have plant-based alternatives made from oats, soy, almonds, and more.

Sometimes the most powerful questions are the simplest ones.

If we wouldn't dream of drinking another animal's milk, why have we made one particular species the exception? 🌱
