Little Miss Hatch Health requested “pink baking”...who am I to say no? @cleaneatingmag lemon chia doughnuts with strawberry glaze 🍋 🍩 🍓
I’ve been traveling for a few weeks for a “medical vacation” and haven’t spent an afternoon in the kitchen in ages. I may have spent a fortune having ingredients delivered, but baking this peach crisp brought a little bit of home to me! What do you miss the most when you’re away from home? 🍑
Always a little sunshine in the shadows ☀️
Science is starting to pay dividends.
Look friends, all I'm saying is right about now, we could ALL use a piece of cake. 🎂
Incredible chocolate cake that happens to be vegan, gluten-free, oil-free, grain-free, and refined sugar-free. Just 1 bowl and simple methods required.
Have A Gay Day
Pause, breathe in, breathe out and ponder - what if?
Friends, we need to talk.
I’ve been quiet for several days, lost inside the vortex of my mind and not knowing how to get back. I felt deeply compelled to speak up, but those anxious thoughts kept telling me to keep my mouth shut and stay in my lane. I’m a woman who has been deeply privileged to grow up safe, educated and with a distinct advantage from the moment I was born, purely by the color of my skin. I generally post pretty photos of muffins and avocado jokes -what can I possibly say that will matter? And isn’t it obvious to all who know and work with me, that I value ALL humans?
I’ve spent a lot of time asking myself these questions. I’ve thought about the world from my young daughter’s perspective. I’ve thought about the example I wish to set and the world I hope to create for my daughter and all other children.
I’m part of the problem.
Yes, you read that correctly.
I, a privileged white woman who counts myself as a human who accepts, loves, honors and values ALL of humankind, am part of the problem. I had to get past my shame to admit it.
Simply put - it’s just not enough to be a decent human being. You have to act. You have to have the hard conversations. Actions speak louder than words, but when it comes to racial equality - words matter a whole lot, too. And I haven’t said them. I’m not being the ally that I claim to be, if I’m not actively talking about how we can confront racism in our hearts and in our homes.
For myself, and for the vast majority of the population I see in my practice, hitting the streets to peacefully protest in solidarity is just simply not available to our bodies. I have, without even realizing it, used that as an excuse not to act - and that needs to change. There are many things you can do without ever leaving your house.
*Speak up - often, loudly, without ceasing. Say the names of those who have been senselessly murdered - George Floyd, Breonna Taylor, Ahmaud Arbery and thousands more.
*Donate if you’re able - check out The Minnesota Freedom Fund, Black Visions Collective, Reclaim the Block, Campaign Zero, Unicorn Riot
*Educate yourselves and your family - it’s not enough to just read books to your children, but that IS a great place to start. Read them to your children, talk about them as a family, and keep the conversation open and active.
*In the same vein, learn, unlearn, and keep learning and unlearning. I personally have learned a lot through @blklivesmatter, @Rachel.cargle, @blackandembodied, @mspackyeti and other activists. Check out the books and resources I post in my stories throughout the next week and into the foreseeable future.
Today is Blackout Tuesday, where the intention was to mute social media and elevate BIPOC voices. I myself posted a black square earlier today in solidarity, and although I maintain that solidarity, I felt compelled to add more. As a white person, it’s not enough to stand together. I can either shut my mouth entirely or open it only for the purpose of sharing resources and elevating the BIPOC community, from whom we have so. Much. To. Learn. I chose the latter.
This starts at home. It’s up to ALL of us to leave the world a better place for the next generation.

Friends, if you read nothing else today - please read this article from Sarahkayhoffman I cannot say “YES YES YES” enough. The stigma on mental health, and even more so on medication, in our country is absolutely out of control and preventing so many wonderful humans from being their very best selves.
It’s ok to take medication. It’s ok to lead a “natural lifestyle” and also take medication. It’s ok to do what you need to do for YOUR body - in fact, it’s amazing.
Taking care of your body and mind in whatever manner works for you is ALWAYS ok. Always.

My favorite sidekick and I did some baking this week, and we came up with a super easy and super tasty new recipe for you! After finding a forgotten can of pumpkin in the pantry, we got to work, and brought a little fall flavor to this weird time in our lives. Enjoy!
Little Hatchling’s Yummy in the Tummy Breakfast Cookies
1/4 coconut oil, melted
1/4 cup honey
2 cups old-fashioned oats
2/3 cup unsweetened dried fruit of choice (cranberries, raisins or cut-up prunes are great)
1/4 cup almond flour*
1/4 cup ground flaxseed
1 tsp. Pumpkin pie spice or cinnamon
1/2 tsp. Sea salt
1/2 cup pumpkin puree or mashed banana
1. Preheat oven to 350 degrees F and line a baking sheet
2. Warm and combine the coconut oil and honey
3. In a large bowl, combine oats, fruit, almond flour, ground flax, spices and salt. Add pumpkin, eggs, and coconut/honey mixture and stir until fully combined.
4. Drop 1/4 cup sized scoops onto the cookie sheet and flatten to desired shape.
5. Bake for 15-20 minutes until edges are lightly browned
6. Let cookies cool completely on baking sheet before moving to an airtight container
7. Enjoy as is or spread with almond butter (a Hatch family favorite!)
*Feel free to omit or sub any kind of chopped nuts/seeds
That feeling when you walk into the kitchen in the morning and remember you already made breakfast 💪🏼Toasted banana bread with almond butter, hemp seeds and a side of berries - one of my favorite ways to start the day! Breakfast is unquestionably my favorite meal of the day. Any other breakfast lovers out there?
Look people, all I know is there was a disagreement over whether or not chocolate chips belong in banana bread and suddenly a double batch of banana bread/muffins appeared on my counter. 🤷🏻♀️ #hatchhealth #glutenfree #dairyfree #minimalistbakerrecipe #bakingtherapy
Quarantine perk: creating new meals! Found some Trader Joe's-Centreville,VA legume risoni in the pantry, and added sweet potatoes and zucchini sautéed in avocado oil, all topped with Everything but the Bagel seasoning. I’m so excited for lunch leftovers today! What new meals have you enjoyed? #hatchhealth #glutenfree #vegan #eatmoreplants #quarantinemeals

Thank you, spring holidays, for giving me yet another excuse to bake! Started the day with Danielle Walker's Against All Grain sticky buns and ended the day with Chocolate Covered Katie carrot cake! Hi Friends. I’ve been wanting to touch base since this pandemic started, and just couldn’t find the words. What could I possibly say that would matter? How can I provide comfort to our little Hatch family? The truth is, I can’t. I can recommend that you nourish your body with foods that make you feel good, move your body everyday and utilize the gift of technology to stay connected - and if you’re lucky enough to be healthy, I DO recommend that you eat, move and laugh together. But the truth is, those things may not be available to everyone right now. Here is what IS available - our attitudes.
I’m trying to approach each day with a mindset not of what I can’t do, but what I GET to do. I get to stay home and stay safe with my family. I get to work from home. I get to FaceTime with family and friends every day. I get to go for long, lazy walks around the neighborhood and examine every flower, stick and squirrel along the way. I get to enjoy life without rushing absolutely anywhere. This is new for all of us. If you’re reading this, you’ve never lived through a pandemic, and everything feels so far out of our control. Take one thing back - even if it’s just for today. Tell me, friends. What do you get to do? 🌸 #hatchhealth
Several people have asked me about the quote I posted the other day from one of my personal heroes, Brené Brown, so I wanted to share the full podcast here. I found it super helpful as we navigate this very new (and temporary!) normal. Stay safe and healthy, friends!
The first Unlocking Us podcast is here! Along with the excitement of sending this into the world, I’m feeling equal doses of fear, awkwardness, and vulnerability.
Thank you, Brené Brown. Just...thank you. 💚
Here in social distancing land, we decided to extend the St Patrick’s Day season with our favorite green pancakes 🥞☘️
1/2 cup oats
1/2 tsp. baking powder
Handful of spinach
Pinch of salt
Cinnamon (as much as desired!)
Combine in blender and cook over medium heat.
The Hatchling couldn’t even wait for them to get to the table! Enjoy!

☘️ Happy St. Patrick’s Day, friends! ☘️I am 0% Irish, but Mr Hatch is 50% and the hatchling is a quarter, so I try my best to get the green flowing in this house. Plus, I think we all just really need a shake right now. Combine all ingredients except the chocolate chips and blend until smooth. Add chocolate chips and pulse a few times. Serve immediately and enjoy! 🍀 #hatchhealth #stpatricksday #shamrockshake #vegan #glutenfree #plantbased
It’s a @traderjoes cauliflower and kale gnocchi in the air fryer kind of night in this house 😋 Are you an air fryer fan? What’s your favorite air fryer delight? #hatchhealth

Sweet news! Our allergen-free, plant-based Chocolate Chip Do Bites are now available at Costco in the refrigerated desserts section.
On the rarest day of the year, we celebrate the rarest people on the planet...and many of you are right here in the Hatch community! Did you know that any disease affecting fewer than 5 in 10,000 people is considered rare? As the only documented case of my genetic mutations, funding and research for people like me is completely nonexistent, placing much of the burden of care management back on the patient. Help spread the word about #RareDiseaseDay to increase awareness and improve the lives of all of those living with rare disease. Do you love someone who is rare? 💕

I had some extra help in the kitchen today prepping for a workshop at Wesley United Methodist Preschool tomorrow! Excited to chat with the staff about eating and living for stress and anxiety management in the workplace. My sous chef approves of the snacks! #hatchhealth #workshoptime #stressmanagement
Ok friends, it’s pep talk time. Remember that really pretty lunch bowl I posted the other day, full of veggies and colors and flavor? Some days that’s what lunch looks like. Other days it looks like this and is shared with my toddler. Yesterday I had a bar and a coffee between doctors appointments. All of these are ok! When we expect “perfection” we set ourselves up for failure, over and over again. Did you eat today? Super. Did you have some protein or fat with your carbs? Congrats! Did you throw a few colors in there? Rockstar status! You’re nailing it, friends, carry on. 💪🏼 #hatchhealth #peptalk #lunchtime
Don’t you just love that moment where you throw everything in the fridge into a salad and it turns out delicious?? Sautéed zucchini, carrot, spinach and quinoa, topped with avocado (duh), sea salt and Bonacci EVOO. Scrumptious and speedy, my favorite lunchtime combination! What’s your favorite “throw it all together” salad? #hatchhealth #lunchrush #glutenfree #eatrealfood #vegan #ilikeplants
Look friends, all I'm saying is the only two items on my grocery list right now are chocolate candies and sunflower seed butter...😇

There’s just something about fresh flowers on a cold, gray February day...🌺 What’s your favorite way to brighten a blah day? #hatchhealth
This super easy and filling breakfast tastes (and smells!) like a slice of blueberry pie! 🥧
1 cup steel cut oats
2 cups blueberries (I used frozen wild blueberries)
2 tablespoons ground flaxseed
1 tablespoon maple syrup
1 teaspoon ground cinnamon
2 cups milk of choice
2 cups water
Optional toppings: Hemp seeds, almond butter, roasted fruit, etc.
Combine oats, blueberries, flaxseed, maple syrup, cinnamon, milk and water in a glass or ceramic bowl, greased with coconut oil. Place bowl in the crockpot and fill surrounding area with about 2 inches of water. Cook on low for 7 hours. (The oatmeal doesn’t have to cook in a separate bowl, but this keeps it from burning and sticking to the sides.) When finished, stir well and serve! I enjoy it best with a hefty swirl of almond butter, and my little Hatchling prefers it the way she prefers most things - heartily topped with hemp seeds!
