🌟EASY WEEKNIGHT DINNER🌟 Ground beef and cabbage

Ingredients:

1 pound ground beef
1/2 small onion, finely diced
3 cups green cabbage, shredded
3 cloves garlic, minced
2 tablespoons soy sauce or coconut aminos
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
2 green onions, sliced (for garnish)

Directions:

1️⃣ In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.

2️⃣ Add the diced onion and garlic to the beef. Cook for 2-3 minutes until fragrant and soft.

3️⃣ Stir in the shredded cabbage and sauté until slightly wilted, about 5 minutes.

4️⃣ Add soy sauce, sesame oil, rice vinegar, ground ginger, red pepper flakes, salt, and pepper. Mix well and cook another 2-3 minutes until cabbage is tender.

5️⃣ Garnish with sliced green onions and sesame seeds before serving.

Sometimes you just gotta for a no or low cook meal. Here’s one of my favorite lunches:

✅ lentils
✅ chicken breast
✅ pico de gallo
✅ olive oil and salt

You can always add this mix to a bag of arugula for a full salad 🙌 swipe to see it in my bowl (it’s not food art but it works!)

Everyone wants simple, healthy, and delicious ideas… so here’s one that’s lunch this week ✅ high protein ✅ good fiber ✅ easy!

👉 canned drained rinsed lentils
👉 chopped chicken (I grilled breasts, you could shred rotisserie)
👉 mix of avocado, red onion, cilantro (with squeeze fresh lemon to keep the avocado from browning)

When I’m ready, mix and measure my desired portions in a bowl with salt and a drizzle olive oil!

🍅 We didn’t have any but I would have added diced tomatoes for volume. 🙌

Veggie filled scrambled eggs for breakfast this morning with leftovers for the next day or two!

13 vital farms eggs
2/3 bag jalepeno jack shredded cheese
1/2 red onion
15 cherry tomatoes
1 yellow bell pepper
8 Amylu chicken breakfast sausage
Salt, pepper, garlic powder and nutmeg

Lean ground turkey, seasoned with Dan-o’s taco seasoning
Shredded romaine for volume
Green onion, cilantro and diced tomatoes
1/2 an avocado
Quest protein chips, crunched up
Dollop of Greek yogurt mixed with lime juice
Chipotle Tabasco on top

600 calories, 64 grams of protein 💪

Want something homemade 🥘 but also fast 💨 but also whole real food 🥑❓

✨This turkey mix is a staple in our house, here’s what’s in it and ways to make and eat it ✨

In a big bowl you’re going to mix all of this up:
🍗 ground turkey
🥑 chopped avocado (small cubes)
🧀 feta cheese crumbles (if you don’t like feta, mozzarella balls works awesome too)
🌿 parsley (flat leaf Italian, chopped)
🧂 salt and optional glug of olive oil

You can form these into meat balls or patties like burgers. You can bake them in the oven at 350 degrees or you can pan fry.

They are delicious on their own to snack on for protein, or,
🍚 with rice
🥦 with broccoli, Brussels, green beans, or really any other greens
🍠 with potatoes
