Need a quick snack to keep you fueled during the workweek? 🙌 Let’s keep it simple, nutritious, and budget-friendly!

Cottage cheese provides protein, crunchy pecans add healthy fats, and the leftover canned fruit from Saturday’s overnight sprouted grain breakfast parfait gets a second life in this easy snack! 🍑 Why let good food go to waste when you can turn it into another nutritious meal or snack?

✨ Why I love this snack:
• 🥛 Includes 3 food groups with balanced macronutrients
• 💪 Provides protein to help keep you satisfied between meals
• 🍑 Uses leftover fruit from Saturday’s breakfast parfait to reduce food waste
• 🥜 Easy to switch up with a different nut each day
• 💰 Costs just $1.58 per serving — $6.31 total for 4 days!

🥄 Nutrition Tips:
• Watch the sodium! Cottage cheese can be surprisingly high in sodium per serving. Compare Nutrition Facts labels and choose a lower-sodium option when available.
• Choose reduced-fat cottage cheese. This can help limit saturated fat intake while still providing protein. Fat-free versions may contain additional sodium or added ingredients, so compare labels rather than assuming fat-free is always the better choice.
• Read the ingredient list, too! Look for cottage cheese with simple ingredients. Some products contain added gums, pectins, or starches that may not be necessary for your preferences. Comparing labels helps you choose a product that works for you.
• Remember calcium! Cottage cheese is an excellent source of protein, but it generally provides less calcium per serving than milk or yogurt. Include a variety of dairy foods throughout your day rather than relying on cottage cheese as your only dairy choice.

🌰 Mix It Up: Swap pecans for walnuts, almonds, or another favorite nut to add variety and keep your snacks interesting.

Healthy eating doesn't have to be complicated or expensive. It's about making practical, nutritious choices that work for your real life!

Healthy eating is too expensive? Let's bust that myth! 💸👇
Ever find yourself with zero fresh fruit in the fridge but still need a quick, healthy breakfast?

Good news: Canned and frozen fruit is just as nutritious as fresh—if you grab the options with no added sugar! Even better, it’s way more budget friendly.

This week, we are skipping the overnight oats and mixing things up with a 5-day breakfast parfait series using non-fat plain Greek yogurt and Food For Life Golden Flax Cereal.

🥣 Why this combo?
Non-fat plain Greek yogurt provides a massive, creamy protein punch without any added sugars. Top it with Food For Life Golden Flax for that classic, crunchy Post Grape-Nuts texture upgraded with organic sprouted lentils, soybeans, and omega-3-rich flax seeds. (Tip: If you can't find the cereal locally, grab a box on Amazon!)
💡 The Parfait Blueprint:
• The Base: Non-fat plain Greek yogurt
• The Crunch: Food For Life Golden Flax Cereal & walnuts (swap the nuts daily for variety!) 🥜
• The Flavor: A different frozen or canned fruit every single day 🍓
• Sweetener Tip: Skip or limit extra honey or syrups—they just add empty calories. Use a sugar substitute if you prefer or let the natural sweetness of the fruit do the heavy lifting!

The Cost Breakdown:
None of these high-protein breakfasts cost more than $3.50 per serving. In fact, the grand total for the entire workweek was just $13.01!
Stay tuned—on Tuesday, I’m dropping a quick snack hack to use up any leftover canned fruit so absolutely nothing goes to waste! ✨

Savory Mexican-Inspired Rolled Grains Bowl | 4 Food Groups in One Meal!

Think oats are just for breakfast? Think again! 🌶️

This savory, Mexican-inspired bowl puts a fun spin on a breakfast staple and makes a versatile meal you can enjoy for breakfast, lunch, or dinner.

I’m using a five-grain blend instead of traditional oats but use whatever you have on hand!

Reduced-sodium taco seasoning adds flavor, while roasted peppers, tomatoes, and zucchini bring color and delicious flavor to the bowl. Roasting vegetables is quick and easy—just spray with your preferred cooking spray, season, and pop them in the oven while you prepare your grains.

I’m adding skinless chicken breast and reduced-fat cheese to help limit saturated fat.

Pistachios are my topping of choice because they provide mostly unsaturated fats rather than the higher amounts of saturated fat found in many animal-based fat sources.
Including some fat in your meal is important because it helps your body absorb fat-soluble vitamins.

🙌 The best part? This meal includes 4 of the 5 food groups! I’m always encouraging variety, balanced meals, and appropriate serving sizes.

You can get creative with your ingredients while still working toward your nutrition goals.

Would you try this savory bowl for breakfast, lunch, or dinner? Let me know in the comments!

A Few Nutrition Tips from Your Dietitian

🌾 Buckwheat Noodles: Buckwheat is a naturally gluten-free whole grain. These noodles cook a little differently from traditional pasta, but they’re still quick to prepare. Remember, though, that the cereal used in the meatballs contains wheat.

🥬 Baby Bok Choy: If you enjoy cooked greens, give baby bok choy a try! It has a mild flavor, a tender texture, and cooks quickly in a sauté pan.

🥢 Sesame Ginger Dressing: Paul Newman’s Sesame Ginger Dressing is one of my favorites because it has a relatively short ingredient list and is comparatively low in sodium compared with similar brands.

🍽️ Don't forget serving sizes! Nutritious foods are an important part of balanced eating, but appropriate portions also matter when building meals around your individual calorie needs.

⏱️ My favorite time-saving tip: Make the meatballs ahead of time and freeze them! Having the meatballs and noodles ready to go makes putting together a quick meal so much easier.

My approach to nutrition is all about variety, practical food choices, and incorporating different food groups into everyday meals. Follow along for more realistic meal ideas and nutrition tips from a registered dietitian!

Each week, I put together snacks for my husband with three goals in mind: keep saturated fat low, include a little fiber, and incorporate as many food groups as possible! 🙌

Whole-grain crackers and reduced-fat cheese are my go-to staples, and they hold up pretty well when stored in the refrigerator. I keep things interesting by switching up the fresh and dried fruits regularly. 🍇🧀🍎

These snacks offer a nice balance of macronutrients to help keep him feeling satisfied and fueled between meals. I also include Mr. Beast Turkey Sticks, which have minimal ingredients and are relatively low in sodium.

It's all about finding simple, convenient ways to build balanced snacks while adding variety! 💪

I love finding unique seed blends at the store! I featured these in an episode of Nutritious Finds, and now I’m combining them all into one mix to make them even easier to use. So much variety packed into just 2½ tablespoons! 🌱

Variety is one of the most important points I emphasize when educating patients! No single food or food group provides all the nutrients your body needs to support metabolism, so mixing things up is key.

Seeds are part of the protein food group, and each variety offers something a little different in calories, fat, fiber, and protein. Since seeds can be calorie-dense, being mindful of portion sizes is important.

Got my chicken meatballs? 🌯 Put them in a wrap!
I’m always looking for simple ways to turn foods I already have into a balanced meal, and this one came together FAST!

🌯 Sprouted whole-grain tortilla
🍗 Chicken meatballs
🥬 Bagged spinach
🎃 Butternut squash
🍅 Pizza sauce
🧀 Cheese

A few things I love about this meal: I keep the tortillas and meatballs in the freezer, the squash can be microwaved or roasted, and there’s no need to dirty another pan—just microwave the wrap until the cheese melts!

One of my favorite nutrition tips: Think about the food groups when putting your meals together. This wrap gives you servings from 4 of the 5 food groups! 🙌

And don’t forget to check those labels! Some jarred pizza sauces are actually lower in sodium than marinara. I look for 20% DV or less for sodium per serving.

Quick. Easy. Balanced. ✔️

NEW SERIES: Party of Four! Family meals, real food, and most importantly… how to portion your plate! First up: my husband’s favorite—chicken & noodles! But let’s be honest…some chicken & noodle recipes aren’t exactly packed with food groups. So, I flipped this one upside down! My goal? Maximize the food groups and minimize everything else.

✔️ Homemade cream of chicken soup made with skim milk + whole-grain pastry flour
✔️ Whole-grain egg noodles
✔️ A meaningful serving of vegetables
✔️ Mashed potatoes with just ONE ingredient: potatoes!

And yes, the bone broth provides some protein, but I’m not counting it as a food group. One more tip: Check those labels! You might be surprised by what gets added to potato flakes. This is what balanced eating looks like in my house—taking a family favorite and making it work without making it complicated. Stay tuned for more Party of Four!

Spoiler alert…I’m in this video! 🎥. I’m “hacking” fruit spread, and this recipe is super simple with SO many ways to use it! I’ve used it on crackers, stirred it into yogurt, and even put it on pancakes. The possibilities are endless! Use whatever fruit you prefer. Frozen fruit tends to work better, but you can experiment with fresh fruit, too. I’ll be sharing more videos using this fruit spread in other meals that are, of course, balanced and nutritious! 😉 Let me know what you think and how you would use it!
