This Wednesday is our second Locally Chopped of the semester! Locally Chopped is held once a month and each month features a different local producer here in Lexington. It is during our normal Farm-To-Fork time and this month we are featuring Ugly Produce!
The Ugly Produce Project is an interdisciplinary sustainability initiative that connects local farmers with students to promote the use of cosmetically imperfect produce that might otherwise go to waste. The project aims to increase awareness of food waste in America, help students learn how to use ugly produce, and provide students with fresh produce from local farms.
As part of the project, we will be hosting four free produce markets for students on September 30, October 21, October 28, and November 4 from 1:00–2:00 p.m. on the lawn of Alumni Commons. Students will have the opportunity to receive local produce, learn more about food waste and sustainability, and discover ways to incorporate cosmetically imperfect produce into their meals.
Stop by to enjoy early-autumn vegetables like butternut squash, kale, and tomatoes! This week’s menu is Last Harvest Pasta with Kale Salad, Garlic Herb Focaccia, and Butternut Squash Cake with Cream Cheese Glaze, hope you’ll join!
