Here’s what you need for the ancient (now viral) soup in a pumpkin.
1 medium sized pumpkin, top removed like a jack-o’-lantern, scoop out seeds and membranes.
IMPORTANT: your pumpkin, with the top on, must fit in your oven. Take a measurement before you begin. 😊
1 package of chicken thighs
Cabbage - about 2 cups chopped
2-3 carrots, sliced
1 large leek, white and light green parts sliced
2 shallots, roughly chopped
3-4 cloves of garlic, crushed
2-3 sprigs of thyme
2 sprigs of rosemary
Salt and pepper
Avocado oil or olive oil
Here’s how to put it together:
Preheat the oven to 360 degrees.
Place the chicken thighs in the bottom of the pumpkin.
Pack in the veggies and herbs.
Drizzle with avocado oil and sprinkle with salt and pepper.
Place the lid back on top and place inside a deep baking pan or a cast iron skillet. Coat the outside in avocado oil.
Place in the oven and roast for 2.5 - 3 hours until chicken internal temp is 165 degrees
The pumpkin will be dark in color and very tender.
Note: in our example we used boneless skinless chicken thighs which may impart less flavor, so you may want to add chicken bone broth for added rich flavor.
Scoop the soup into bowls. Add salt or pepper to taste.
ENJOY!
