It took me a long time to understand. I used to think some people were born skinny, never gained weight or were just fit by nature. Then one day Weston and I started waking up at 5am to work out, meditate and have some personal grounding time. Walking the neighborhood that early in the morning I saw lights on, garage doors opening: neighbors going for a run, a yoga class or for a bike ride. The same neighbors I used to think of as fit without effort. It has been a while for me now waking up early, exercising, eating well and making health a priority. I am still learning. How has your journey been?

Apricots are packed with life giving nutrients and the dry variety makes for an excellent snack or dessert. While E220 may not be dangerous for most people, I still advise we always choose dry fruit without sharp colors as fruit, naturally, changes to brown color when it oxidizes.

My shopping basket is a great conversation starter: “Are you going to eat all that?” “How many children do you have?” or “You are going to juice that, aren’t you?”

Every time I have the opportunity to be in the woods, I take it! No wonder I am such a big fan of John Muir. In his words: “And into the forest I go, to lose my mind and find my soul.” Talking about the forest, did you know the trees can communicate and support eachother if there is a threat? There is so much we are yet to have learnt from and about trees. “The Secret Lives of Trees” is amazing for that matter. What if all the products had labels like these on the front of the packaging? Examples: this product raises your blood sugar by 100mg/dL, this product clogs your arteries, this product has zero micronutrients. The last one would be oil. Yes, any kind of oil.

Above all else, my father absolutely loved reading in a time in Romania when books were very hard to aquire, where access to knowledge and information was scarce and censored. Yet, he managed to build a nice home library and I grew up surounded by books. He being a voracious reader did not make me one as a child. I simply did not like to read. Now, with all the books at my fingertips and all the knowledge for the taking, I can never have enough time for reading. I average around 40-50 a year. I give you book reading braging rights on this page. Always. Feel free to share what you learn and pass on the passion. The multidimensional health includes continous learning. With summer fast approaching I, too, am a little more disciplined about my diet. I am conscious of my salt and oil intake and continue focusing on a plant based diet. I woke up to rain smelling like summer and with thoughts of blankets, books and warm porridge and tea. I put together this yummy meal that got the mark of approval from my newly teenage girl: the dates make it just sweet enough, the grains are hardy and chewy and the blood sugar does not drop as drastically.

Three Grain Porridge

Serves 4 people

½ cup Quinoa
½ cup Buckwheat Groats
½ cup Steel Cut Oats
1 Tablespoon of vinegar
Water for soaking

Soak the grains for at least two hours in water and vinegar. This process facilitates the digestive process and breaks down the phytic acid that blocks the absorption of some of the nutrients.

1 Tablespoon Coconut Oil
1 teaspoon Cinnamon
½ teaspoon Cardamom
¼ teaspoon Nutmeg
2 cups of plant milk (more if necessary)
2 Medjool Dates
1 Tablespoon Chia Seeds
1 teaspoon Vanilla
Berries and toppings of choice: walnuts, coconut, etc.

Start by roasting the spices for two minutes in coconut oil. Make sure you watch the pot so they won’t burn. Add the soaked and drained grains, the plant milk, the chopped dates, chia seeds and vanilla. Bring to a boil and then simmer until the grains are soft. Top with berries and other toppings of choice.

Elf is my best friend, ilinca’s guard dog and Weston’s shenanigans companion.

Elfie, and all the other pets, are more than that: loving on a dog reduces the stress hormone named cortisol, increases oxytocin (the feel good hormone) assists in the transition to a parasympathetic nervous system AND coming in contact with a pet increases the diversity of our own microbiome—what is believed to be the key to immunity and overall health.

As if we needed more reasons to love on our pets…
