RECIPE:
Classic Basque Burnt Cheesecake
Serves: 8-10 | Prep: 15 min | Bake: 40-45 min
Ingredients:
- 900g (4 blocks) cream cheese, room temperature
- 250g (1 cup + 2 tbsp) sugar
- 5 large eggs, room temperature
- 475ml (2 cups) heavy cream
- 30g (1/4 cup) all-purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
Steps:
1. Preheat oven to 220Β°C (425Β°F).
2. Line a 9-inch springform pan with two crisscrossed sheets of parchment paper. Let it wrinkle and stick up above the rim. No need to be neat.
3. Beat cream cheese and sugar until smooth and lump-free.
4. Add eggs one at a time, mixing gently after each.
5. Pour in cream and vanilla. Sift in flour and salt. Mix until just combined.
6. Pour batter into the pan and tap lightly to release air bubbles.
7. Bake 40-45 minutes until the top is deep dark brown and the center still jiggles like jelly.
8. Cool completely in the pan at room temperature (the center will set as it cools).
9. Chill at least 4 hours, then slice and serve.
Pro Tips:
- Room-temperature ingredients give the smoothest, creamiest center.
- Don't open the oven door while baking.
- The dark top is the goal, not a mistake!
Burnt on top. Creamy in the middle. Zero crust. ππ₯
