The last snacking cake of the season is our Chocolate Chile Cake! We make this cake with Misty Brook Wheat from Rusted Rooster Farm in ME; Danko Rye from Wild Hive Farm in NY; and the world's best sunflower oil from Morningstar Farm in Glover, VT. We use a ton of fair-trade cocoa for a rich chocolate flavor, and we top the whole thing with a spicy cinnamon sugar. The perfect cake for the spooky season? We think so!

Pan de Mu**to is here! Our family recipe for this traditional Dia de los Mu**tos pan dulce is full of tradition... and flavor! This season we're making it with Bolles wheat from Morningstar Farm VT, Glenn wheat from Wild Hive Farm NY, and Sonora wheat from Ramona Farms AZ. Then we add organic orange zest, organic whole anise, and organic almond extract, and we shape these beloved breads with the traditional skull and crossbones on top. A sprinkling of sugar makes the perfect final touch. We'll have our PdM at all our markets during October; we strongly recommend pre-ordering, which you can do at the link in bio.

September means the beginning of apple season here in Vermont, and we're celebrating with one of our favorite snacking cakes. We roast Paula Red apples from Champlain Orchards with organic citrus, stick cinnamon, and just a bit of sugar, and then we cure the roasted apples until the flavors fuse. The cake base is made with Misty Brook wheat from Sandra, and we top the whole thing with a cinnamon-brown-sugar rolled-oat crumble for that extra texture. The days are getting shorter, but this cake makes Fall worth it!

It's crazy to think that everything we've baked we've made with flour milled on our Mockmill 100... that is, until now!
