I don’t know who needs to hear this but… Everyone β€” and I mean everyone! β€” struggles with their motivation and mindset sometimes. But that doesn’t mean you give up. Instead, you have to get tactical.

Affirmations and intentions may seem "woo-woo," but they're scientifically proven to boost your mindset and keep you on track.

βœ… Affirmations act like an umbrella, shielding you from negativity, while intentions guide your actions towards your goals.

βœ… Affirmations are about changing beliefs and attitudes, while intentions focus on guiding behaviors and actions.

Both work hand in hand to build momentum and keep you moving forward.

So, when was the last time you set an intention for the day?

Get enough magnesium: Magnesium supports the activation of enzymes involved in estrogen metabolism, promoting the conversion of estrogen into less potent forms for easier elimination.

Eat probiotic-rich foods: Probiotics foster gut health, aiding the elimination of excess estrogen.

(serves 2)

Ingredients:
- 1 x 14 oz/400 g can chickpeas, drained and rinsed
- 1 medium ripe avocado, peeled, pitted, and mashed
- 1 cup/150 grams cherry tomatoes, halved
- Juice of 1 medium lemon juice
- Handful of fresh cilantro, chopped
- 5 oz/150 grams of canned/pouch tuna in water, drained (I use Wild Planet brand)
- Sea salt and fresh cracked pepper to taste

Cooking procedure:
In a mixing bowl, combine the mashed avocado with the lemon juice. Stir in the chickpeas, cherry tomatoes, and tuna. Toss in the cilantro. Sprinkle with a little sea salt and black pepper. Eat and enjoy! πŸ˜‹

Make-Ahead Tip: You can prep the chickpeas, tuna, tomatoes, and cilantro in advance. Just add the avocado and lemon juice when you're ready to eat. This will keep 2-3 days in the fridge.

Cauliflower, the versatile veggie, takes center stage in this crust, packed with vitamins, minerals, and antioxidants. Quinoa adds a protein punch, making it a complete and fiber-rich delight. Flax seeds not only bind the crust but also bring omega-3 benefits to the table!

Crust Ingredients:

- 1/2 cup soaked quinoa
- 1/2 cauliflower head
- 1/4 cup water
- 1 tbsp flax seed
- 1 tsp baking powder
- 1 clove garlic
- 3 tbsp olive oil

Indulge in a DELICIOUS and healthy lunch with my Strawberry Poppyseed Chicken Salad! πŸ₯—βœ¨ Inspired by Panera's seasonal delight, this revamped recipe tones down the sweetness. Craving a bit of sweetness? Add no-sugar-added mandarin oranges or pineapple chunks!

Here's the recipe for 2 servings:

Ingredients:

- 4 big handfuls (cups) mixed salad greens
- 1 cooked chicken breast, diced
- 4 large strawberries, hulled and sliced
- Β½ cup (75 g) blueberries
- ΒΌ cup (30 grams) avocado
- ΒΌ cup (30 g) chopped toasted pecans (raw)

Poppyseed Dressing:

- Β½ tsp sea salt
- 1 Tbsp honey (or a few drops of stevia/monk fruit)
- 2 Tbsp apple cider vinegar
- ΒΌ cup (55 g) plain coconut sugar-free yogurt

Instructions:

Ingredients:

- 1 cup sliced almonds
- 1 cup unsweetened coconut flakes
- 1/2 cup raw sunflower seeds
- 1/2 cup shelled pumpkin seeds
- 1⁄4 cup coconut nectar or try Lakanto maple monk fruit syrup
- 1/4 cup extra virgin coconut oil

Welcome to Kristin Fitness

Kristin DiDomenico is the owner of Kristinfitness, a personal training and health coaching business based in northern Virginia. She is an AFFA certified personal trainer and certified holistic health counselor. For the past 20 years, she has been training, educating and motivating people to live their best life through her personalized health and fitness programs.

Kristin became a health and nutrition counselor to help women improve their eating habits and break cycles of addictive and emotional eating in order to develop and maintain a healthy weight and a positive relationship with food. She received her health coach training at the Institute for Integrative Nutrition in New York City.

Kristin offers individual and group health, fitness and nutrition coaching for busy female professionals and moms, both in person and online.

Kristin is also the author of DYING TO BE ENOUGH.
