Easy wheat berry salad in the instant pot!

The wheat berries take 40 minutes to cook in the instant pot, but it won't take long to chop an onion, 2 stalks of celery, and a bell pepper, dig out your frozen corn, and make your dressing.

After it's done cooking, drain the wheat berries, then add to a bowl. Now add all your chopped veggies.

In a blender add white w**e vinegar (or your fave), a T dijon mustard, or more to taste, 2 T tahini, a splash of lemon or lime juice, salt, pepper, and garlic and onion powder to taste, blend until smooth. You could whisk this, but I was down to the bottom of my tahini jar so it was thick and I had to blend it. Pour dressing on top, mix well. You can add cucumber, cherry tomatoes, whatever you like.

Let me know if you try it. I'd love to hear what you think!

Ugh, what to eat for breakfast?! How about leveraging your instant pot? I have a lot of zucchini in my garden and need to use it up. I shredded a zucchini with my food processor, sprayed my instant pot with avocado oil (oatmeal likes to stick), dumped in 3 cups of old fashioned oats, 6 cups of water, a few handfuls of raisins, and about 2 cups of pitted frozen cherries. Cook on sealing for 3 minutes, then let pressure release naturally for about 10 minutes. Then stir, pour carefully (I used my Ove Gloves) into glass jars with a funnel and store in the fridge. In the morning I add it to a bowl, add plant milk, ground flax seed, maybe some PB2 or cocoa, pop it in the microwave and enjoy!

It's even good cold.

Any day that I started to feel antsy I ask myself why. Sometimes it's because I'm tired, but often it's because I've been cooped up inside all day. Last year we planted some raspberries, and sometimes I just need a raspberry picking break (yes, that's a thing). I get a walk, I get a snack, I get some sunshine. It's a triple win. What keeps you grounded?

You will never hear me say I'm on a low carb diet. Why? Because we need carbs to function. Carbohydrates fuel our muscles and our central nervous system. Fiber is a type of carb that our gastrointestinal tract can't break down. We need fiber to help get rid of waste in our bodies and keep our intestinal tract healthy.

An easy evening snack, strawberries and bananas in the Yonanas machine topped with some roasted and salted edamame. It's also good with tahini drizzled on top, then it feels more like a sundae.
