Gut inflammation can start with the oil you cook in.
A hundred years ago our great grandparents had never heard of soybean oil.
Their kitchens ran on traditional fats, and the refined seed oils that fill the standard American diet today simply did not exist yet.
Soybean, corn, canola and peanut oil go through heavy heat, deodorizing and filtering before they ever reach your pan.
That processing damages the fats, and damaged fats create oxidative stress that uses up your body’s stores of vitamin C and vitamin E.
The better choices are coconut oil, cold-pressed olive oil and good-quality avocado oil.
I reach for avocado oil for most cooking because the flavor is so neutral, and I save olive oil for dressings.
If you love fried fish, try grilling it and breading it yourself so you control what it’s cooked in.
