Helping you sit down, slow down, and share real food with at least one other person. It All Starts At The Table™

Becoming a Health and Life Coach was a natural next step for Catherine. Catherine holds a bachelor’s degree in Elementary Education and taught 1st grade for 9 years for Department of Defense Dependent Schools on US Military Bases in the Republic of Panama and in Puerto Rico. After her youngest of three children enrolled in school full-time, Catherine attended the Culinary Business Academy and launched a successful personal chef business, Lavish Cuisine, in 2012 in South Texas. Catherine’s desire to dig deeper into nutrition became a priority, and in August of 2024, she enrolled in both Harvard Medical School’s Executive Education program to study designing sustainable nutrition plans, and in The Health Coach Institute to receive certification to become a dual certified health and life coach. Catherine is excited to launch Modern Mindset Coaching and help guide her clients to set and achieve their goals.

In January 2023, I lost my dad to complications of dementia. After he was gone, I took a long, hard look at my own life. I wanted a long healthspan, not just a long lifespan — and I didn't know how to get there. So I did what I always do: I went back to school. Three Harvard Medical School classes, a health and life coach certification, and a whole new understanding of what it takes to age well.

That's why I built my new website, and why I host At Catherine's Table.

I have 4 seats left for the Mediterranean dinner at my home on Wednesday, October 21. I won't be hosting in November or December, so this is it until January. Come sit at my table.

Years ago I was sitting in a hair salon, venting about my very frustrating online dating life, when the stylist's assistant cheerfully said:

"Tell us more! This is a free judgment zone!"

He caught himself right away. "I meant judgment-free zone!"

And I thought, nope. You had it right the first time.

Let's be honest. We're all pretty quick to judge. We size people up before they've said a word. And we're usually hardest on ourselves.

Coaching taught me to do something different: get curious instead.

Judgment says, "Why can't you just do this?"
Curiosity asks, "What's making this hard?"

Judgment says, "You know what you should be doing."
Curiosity asks, "What keeps getting in the way?"

Most of us don't need more information. We know vegetables are good for us. We know sleep matters. We know eating dinner over the sink or in the car isn't ideal. Knowing and doing are two very different things.

So the better question is: where are you stuck, and why?

Maybe the routine you built during a chaotic season just became permanent.
Maybe you're trying to change five things at once.
Maybe you've spent years taking care of everyone else and aren't sure what you want anymore.
Maybe you keep starting over every Monday because your plan only works if you're perfect.

That's where I start with clients. Not with a list of everything you should be doing, but with what's actually happening in your life right now. Then we build a plan for your real life. Something simple enough to start, meaningful enough to matter, and flexible enough to survive a busy Tuesday.

Then we check in. What worked? What didn't? And instead of calling it a failure, we get curious again and adjust.

Getting unstuck rarely starts with someone telling you to try harder. It usually starts with a better question.

What's one thing you keep "starting over" on?

Join me for a Mediterranean dinner in my home on Wednesday, October 21, from 6:15–8:00 PM.

We’ll begin in the kitchen, where you’ll meet Stella—my daughter’s sourdough starter that I’ve somehow become responsible for keeping alive. We’ll make sourdough discard flatbread together, I’ll show you how I make homemade hummus, and then we’ll sit down around the table for a Mediterranean family-style dinner and dessert.

If the weather cooperates, we may cook and dine outside in my outdoor kitchen.

Along the way, we’ll talk about some of my favorite topics:

• The Mediterranean Diet
• The MIND Diet
• Food, happiness & healthspan
• Why connection around the table matters

This is an alcohol-free evening designed for good food, conversation, learning, and connection.

Seating is limited to just 8 guests.
Cost: $110 per person

To attend, visit my website and click “Request an Invitation” under At Catherine’s Table. Complete the short form, and I’ll email you personally after I receive your request. Because this gathering is held in my home, registration is not automatic.

I’m really looking forward to opening my table for this one.

Smoked paprika chicken over a cauliflower-potato puree with no heavy cream, just a little butter and chive cream cheese. Two large chicken breasts can feed up to four people.

My goal is to help you get dinner on the table with less stress, so you can actually sit down and eat with the people you love.

The whole recipe is in the slides. I’m adding new recipes to the Recipe Box on my website every day right now, so take a look and check back often. catherinerichey.com (link in bio)

New on the blog: How I Build a Healthy Plate

This is the simple framework I use when I’m planning meals for my clients and for myself: lots of plants, enough protein, quality carbs, healthy fats — and no need to make eating well overly complicated.

And I’m adding one more piece that matters just as much to me: sit down and enjoy your food. Bonus points if you share the table with someone.

My oldest son, Matt, called me for this recipe when he bought his first house. My longtime Wednesday client requests this recipe every couple of months. They’re juicy, flavorful, freezer-friendly, and very easy to make.

The full recipe is on my website. Link in bio.

Real food. Real connection. Real joy.

Health is about so much more than just what's on your plate. My coaching philosophy is rooted in the belief that real wellness starts at the table—through real food, real connection, and real joy. It's time to nourish your life, not just your body. What does a healthy lifestyle mean to you?

A few weeks ago I asked: if you could sit at my kitchen table and say, "Catherine, I need help with THIS," what would it be?

I heard you. So many of you said some version of the same thing. I don't know what to cook. I need easy recipes I can make from what's on hand. I want to get back to the basics. I'm stuck in a rut. Feeding picky eaters wears me out.

So I've rebuilt my website around exactly that. There's a new Recipe Box with real meals I actually cook, no life story, just the recipe. There are small gatherings and hands-on cooking classes in my kitchen. And there's one-on-one help when you want someone in your corner.

The first recipe is up: 10-minute turkey taco bowls, made mostly from the pantry. Everything goes in separate bowls so everyone builds their own plate. Skip the quinoa for low-carb, pack the leftovers for lunches, or add sour cream if you want it richer.

Thank you for answering so honestly. Keep telling me what feels harder than it should. That's what I'll keep building.

The full recipe is in the first comment.

I’ve been thinking a lot lately about how I want to use everything I’ve learned over the years—as a chef, teacher, coach, mom, and someone who has spent a whole lot of her life around tables.

And instead of sitting here trying to guess what people need, I thought I’d just ask you.

Where could I actually make your life easier?

When it comes to food, cooking, getting dinner on the table, feeding yourself or the people you love, eating well, gathering people together, or creating more connection around the table—what feels harder than it should?

What do you wish someone could simply teach you, show you, organize for you, or help you figure out?

Maybe it’s something practical. Maybe it’s something you’ve been struggling with for years. Maybe it’s something I haven’t thought of at all.

If you could sit down at my kitchen table with me and say, “Catherine, I need help with THIS,” what would this be?

I’m genuinely asking—and genuinely listening.

Because after a lifetime spent around tables, I have a feeling the next chapter of my work might be less about deciding what I want to teach and more about listening to what people actually need.

So tell me. What’s hard? What do you wish were easier?

Leave me a comment, or if you’d rather answer privately, send me a message. I really do want to hear what you have to say.
