Having protein (and some fat) with your carbs helps reduce the spiking of your blood sugar as well as the subsequent crash of blood sugar after eating something sweet or starchy. This picture from from the glucose goddess serves as a really helpful visual of the difference protein and fat makes to blood sugar. The more your blood sugar spikes up and drops down, the more damage to your cells (the sorbet causes more of a spike and drop because it doesn’t have the protein and fat that the ice cream has).
