Most of my patients are working to increase their protein intake. This is helpful for increasing energy, helping to regulate blood sugars, and prevent the 3:00 energy drain (I know we all struggle with this!)
Hard boiled eggs are a super quick and tasty snack to get quality protein either mid morning or mid afternoon. But do you know what isn't quick OR easy? Having to peel them first. A quick snack becomes an entire ordeal, and soon you throw in the towel and grab something else that is probably less nutritious.
How to prevent this?? Peel your eggs right after boiling!
🥚Set to a boil, then cover and turn off the burner letting the eggs sit for 11 minutes .
🥚While you wait get an ice bath going (cubes and water in a bowl big enough for all eggs) and grab some 4oz ball jars with cute lids
🥚Peel and stock the fridge for the week!

A little sneak peek into our fridge!
While I try to keep processed foods to a minimum, life and school schedules just take over.
I do a ton of food prep so you can see lots of fruits and veggies ready to eat.
I always cook meat in bulk so lots of chicken and beef ready to use on a salad or in a dish.
I'm a real mom, with real feeding my kids issues 🤣
Also, we need a second fridge! We have a deep freeze for our cow share storage, but as the kids get bigger I need more space! Where is the 🍉 supposed to go??!
Having a busy schedule doesn't have to mean a drive through breakfast! Usually I make everything from scratch if possible, but I occasionally buy the sous vide egg bites from Costco for a quick option. Today I decided to sauté some spinach, onion, and peppers while the eggs cooked in the air fryer (and while I made my kids their school lunch!)
I prep veggies on the weekends so I can just dump them in the pan and go!
Easy quick meal with protein and veggies ✅

It's home made marinara day!! This is what I am starting with, and by tonight will have a delicious sauce filled with yummy veggies! Once I blend it up with my immersion blender the kids have no idea they are eating a plate of vegetables. They love it as a pizza sauce or with some ravioli and meatballs (tonight's meal🤤)

Today was farm pickup day! This is what a 1/4 🐄, extra ground beef, and 10 dozen eggs look like. Our food is the highest quality you can find (definitely can't buy this in grocery stores!), is full of more nutrients than traditionally raised products, and tastes absolutely delicious! Add to this the veggies I grow in our garden and the bread I bake, I really don't need to buy much from the stores these days.
We don't live on a farm, but choose to support those around us!! Buy local, support your farmers 🥰

Today's harvest! Chard, spinach, lettuces, cilantro, Brussels, green beans, kale, and a purple carrot!
Plan is to wash and chop all greens to make smoothie bags in the freezer. Stay tuned!
