SWEET POTATOES WITH SUN DRIED TOMATO-DATE-BASIL CRUMBLE!
Charred skins, fluffy center, piled high with crispy kale & spiced crispy chickpeas. Then the star: a SUN DRIED TOMATO-DATE-BASIL CRUMBLE with salty capers & toasty walnuts. Sweet, salty, herby, crunchy. Finished with a creamy tahini balsamic drizzle over everything.
•
For the sweet potatoes & crumble:
3 sweet potatoes, halved
2 tbsp olive oil, divided
Salt
1 15 oz can chickpeas, rinsed & drained
1 tbsp maple syrup
1/2 tbsp paprika
1/2 tbsp onion powder
3 cups chopped kale
2 tbsp grated Parmesan
1/3 cup walnuts
4 large dates
1/3 cup sun dried tomatoes
1/3 cup fresh packed basil
1 tbsp capers
1/2 tsp lemon zest
•
For the sauce:
3 tbsp balsamic vinegar
1/2 tbsp maple syrup
1 tsp mustard
Squeeze lemon juice
1/4 cup cottage cheese
2 tbsp olive oil
Pinch salt
Pepper to taste
1-2 tbsp water to thin
•
1️⃣Preheat the oven to 425.2️⃣Drizzle 1/2 tbsp olive oil on the bottom of a large sheet pan, add salt and place the sweet potatoes face down. Drizzle with a little more oil and bake them for 20-25 mins.3️⃣While they roast, make the crumble. Add each component one at a time—walnuts, dates, sun dried tomatoes, basil, capers, lemon zest—and chop. Chop everything together until it forms a “crumble.” Set aside 4️⃣Make the sauce. Add everything except water to a blender and blend until smooth. Add water 1 tbsp at a time until desired consistency. 5️⃣Remove the sweets from the oven and move them to one side. Add the chickpeas to the other side. Drizzle them with 1/2 tbsp olive oil, maple, salt, paprika and onion powder. Toss and roast for 20 minutes, flipping the sweets and tossing chickpeas halfway. 6️⃣Remove the sweets and chickpeas from sheet pan, then add the kale to the sheet pan. Drizzle with 1 tbsp olive oil, Parmesan and a pinch of salt and roast for about 10 mins, until crisp. Careful not to burn. 7️⃣Plate the sweets, mash the center, then top with the kale, chickpeas, crumble and a drizzle.

Love this one reposted from Amberrecipes Loaded Sweet Potato Skins with Whipped Feta, Avocado & Chili Honey 🍠🥑

These loaded sweet potato skins are crispy on the outside, tender on the inside, and filled with creamy whipped feta, fresh avocado, and a sweet-and-spicy chili honey drizzle. They’re perfect as an appetizer, light lunch, or flavorful side dish.

🛒 Ingredients
4 medium sweet potatoes
2 tbsp extra virgin olive oil
Salt and freshly ground black pepper, to taste
½ cup feta cheese
¼ cup plain Greek yogurt
1 tbsp fresh lemon juice
2 ripe avocados, diced
2 tbsp honey
1 tsp chili flakes (or use hot honey)
2 tbsp chopped fresh parsley or cilantro
2 tbsp toasted pumpkin seeds or chopped walnuts (optional)
👩‍🍳 Instructions
Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork, rub them with olive oil, and season generously with salt and pepper.
Bake for 40–45 minutes, or until the potatoes are fork-tender. Let them cool slightly, then slice each one in half lengthwise and carefully scoop out some of the flesh, leaving a thin layer inside the skins.
Place the potato skins back on the baking sheet and bake for another 8–10 minutes until lightly crisp.
In a food processor or blender, combine the feta, Greek yogurt, and lemon juice. Blend until smooth and creamy.
Spread or pipe the whipped feta evenly into each crispy sweet potato skin.
Top with the diced avocado.
Warm the honey slightly, stir in the chili flakes, and drizzle the spicy honey over each potato skin.
Finish with chopped parsley or cilantro and sprinkle with toasted pumpkin seeds or walnuts, if desired.
💡 Tips
Save the scooped-out sweet potato flesh for soups, mashed sweet potatoes, or smoothies.
Use hot honey instead of regular honey and chili flakes for an even easier topping.
Add grilled chicken or shrimp to turn these into a more filling meal.
Serve immediately for the best combination of crispy skins and creamy toppings.

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Servings: 4
