🥜 Budget-Friendly High-Protein Vegan & Gluten-Free Peanut Butter Biscuits • Xanthan Gum Free
Yields: Approximately 22 large biscuits, depending on the size you make them.
Ingredients:
• 1/2 mug peanut butter • 1/4 mug neutral oil • 1/2 mug cornstarch • 1/2 mug icing sugar • 1 mug chickpea flour • 1 tsp vanilla essence • ½ level tsp baking powder
Method:
1. Preheat your oven to 180°C for 10 minutes.
2. Gently soften the peanut butter in the microwave or on the stovetop.
3. In a large bowl, whisk together the softened peanut butter and neutral oil until smooth.
4. Add the icing sugar and vanilla essence. Mix well.
5. Fold in the chickpea flour, cornstarch, and baking powder until a dough forms.
6. If the dough feels too crumbly, add one tablespoon of plant-based milk, until it holds together easily.
7. Lightly grease a baking tray.
8. Roll the dough into walnut-sized balls, gently flatten them in your palm, and place them on the tray.
9. Bake for 12–15 minutes at 180°C.
Healthier Option Use 100% natural, sugar-free peanut butter and reduce or omit the icing sugar to suit your taste.
Top Tip These biscuits are delicate while hot. Leave them to cool on the baking tray for 2–5 minutes before moving them. Once cooled slightly, they'll firm up beautifully without breaking.
Perfect with a cup of tea or coffee, and packed with plant-based protein! 🌿
