🐾❤️ FROM PETRIFIED TO PROUD!

After a frightening experience with a dog, “Aunty Moni” (my dear friend and makeup artist extraordinaire) was terrified of them. But along came Louis, our gentle, loving English Labrador Retriever! 🦮

Thanks to a little dog therapy, plenty of patience and Louis’s loving and protective nature, she’s regained her confidence. We even enjoyed a beautiful walk together in Sydney’s Centennial Park, with Aunty Moni proudly walking Louis on the leash! 🥰

Never underestimate the healing power of a gentle dog! ❤️

🐕 Have you witnessed a similar transformation thanks to a loving dog? I’d love to hear your story!

🇬🇷🧑‍🍳 ON HOLIDAYS… BUT STILL COOKING!

I love cooking for family and friends – even when I’m away on holidays or for the weekend! And here’s a legume winner that feeds a crowd, can be made ahead and tastes absolutely delicious! 😋

Inspired by a previous visit to Ikaria, a Greek island famous as one of the world’s Blue Zones (longevity hotspots), this baked chickpea dish with rosemary celebrates simple Mediterranean cooking.

All you need is a tiny kitchen, a handful of wholesome ingredients and a little inspiration!

On my recent trip to Greece, I whipped up a tray of this protein-rich, fibre-packed goodness – and I was blown away that even the seasoned Greek cooks in Thessaloniki asked for my recipe! I also remembered to take a few photos along the way, just so you can see how it comes together.

BTW - I lacked a few of my secret ingredients. But that just goes to show you can modify any recipe 1000 ways as the Greeks have always done - based on what’s available. And you can create such a bake with almost any legume. After all, where did baked beans first come from?

🌿 Who says you need a fancy kitchen to cook something delicious and nourishing that even non-vegetarians will love?

🥔💜 I’m in POTATO BLISS!

Which ones will I buy at the organic farmers market? Perhaps a little of ALL of them! 😍

Pigmented potatoes are particular favourites of mine, packed with colourful, health-promoting phytonutrients, including carotenoids and flavonoids. You’ll find delicious ways to use them in my Food as Medicine cookbooks.

And here’s something else exciting! If you’re attending the 50th Nutrition Society of Australia Conference in Melbourne this December, you’ll have the opportunity to taste the stunning purple Congo potato and discover how to transform it into something simple, innovative and utterly delicious! Plus…other innovative recipe ideas.

👩‍🍳🔬 Calling all nutrition scientists and colleagues! Check out the conference workshop options and, if you haven’t already, book into our Culinary Education and Interventions for Nutrition Research, Teaching and Practice workshop.

We’ve assembled a fabulous, expert team and an interactive program packed with practical ideas to help you integrate more culinary education whether you’re a researcher, teacher, academic or practising clinician.

Don’t miss this delicious opportunity to experience culinary medicine in action!

🎙️ DIABETES: THERE'S MORE POWER ON YOUR PLATE THAN YOU THINK! 🌱

Thanks, Faith FM, for having me on to chat with Rachel about diabetes prevention, better management and even remission!

With diabetes rates soaring, it's important to know what tools we have to fight back. And what you put on your fork is one of the most powerful!

Your diet helps shape your gut microbiome and influences how your genes are expressed. So even if diabetes runs in your family, your future isn't necessarily written in stone!

We discussed why the quality of your carbs, proteins and fats matters, and why simply cutting sugar, trimming fat off steak or choosing low-fat milk isn't enough.

🌱 Think MORE whole plant foods, MORE fibre, smarter meal timing and LESS late-night eating.

And, of course, Rachel and I chatted about some of my delicious recipes to put this science into practice. After all, I’m a foodie as well as a scientist!

📖 Want to learn more? Grab my award-winning Food as Medicine: Cooking to Prevent and Treat Diabetes from your library, local bookshop or online booksellers.

It's never too late to start eating your way towards better health! 💚

🇮🇹 A FRESH TWIST ON A CLASSIC ITALIAN 🌿

I love discovering creative twists on classic Mediterranean dishes, like Insalata Caprese!

At Cibaria in Manly, I tried Vannella buffalo mozzarella served with peas, beans, Amalfi lemon and fresh basil. 🫛🍋

What a delightful combination! The peas and beans added a lovely sweetness, while the lemon and herbs brought freshness to this creamy Italian-inspired dish. I'd happily order it again!

One of the joys of trying new restaurants is picking up inspiration for flavours, textures and unexpected food combinations to recreate at home.

And another big plus? 🐾 Louis was welcome! Cibaria has special outdoor tables to accommodate diners with dogs. These days, that's one of my first considerations when choosing somewhere new to eat as baby boy doesn’t like being left at home alone! Who else has that problem?!

Have you discovered an interesting restaurant dish that's inspired your home cooking?

🌰 HAPPY NUT DAY! 🌰

You know I'm a big fan of nuts and seeds – and all things Mediterranean! 💚

But nuts are so much more than a snack or something to sprinkle over your breakfast cereal!

Packed with health-promoting plant protein and other valuable nutrients, nuts can be transformed into delicious savoury dishes – from creamy cheeses and sour creams to nut-based "meatloaves" and "meatballs". I make them all!

🌿 Pictured here is my Almond Cream Cheese Topped with Herbs. And here's the funny thing: whenever people taste it, they ask where I bought it!

The answer? I made it myself – from almonds! 😋

It's a fabulous recipe to try now, then make again to impress your guests over the festive season.

📖 You'll find the recipe in Food as Medicine: Cooking for Your Best Health (pp. 224–225, Australasian edition).

Don't have the book? Ask your local library! Many already stock it, and others can order it in.

🌰 Here's some food for thought: Only around 2% of Australians eat the recommended 30 g of nuts a day for good health!

So this Nut Day, let's spread the word: nuts are far more versatile than most people realise, super important for our everyday health – and delicious to boot!

What's your favourite way to use nuts beyond snacking?

A SIGNIFICANT BIRTHDAY RECENTLY… AND A LIFE IN FOOD & NUTRITION SUMMARISED! 🌿🍋

To mark a significant birthday, I asked AI to capture who I am, what drives me, and why I get out of bed each morning!

My passion? Helping people live their best lives through better food and nutrition. And especially sharing the science and delicious possibilities of plant-based dietary patterns, including the Mediterranean diet, which I've had the privilege of researching at the University of Sydney.

This is what AI came up with! For those who know me quite well, not a bad summary of my professional and culinary journey, don't you think?

From clinical dietetics and nutrition research to culinary medicine cookshops and award-winning Food as Medicine cookbooks that now reach people across the globe, it's been a rewarding journey. And I'm certainly not finished yet! 🌍👩‍🍳

If you're a fellow dietitian or nutritionist, what gets YOU out of bed each morning?

🐾 What’s on Louis’s menu? 🥕🥦🐟

People sometimes ask what I feed Louis, my English Labrador Retriever.

No, I don’t cook separate meals for him. He gets a decent-quality dry kibble with adequate macronutrients, but I jazz it up with a rotating selection of vegetables and twice weekly sardines (which he goes absolutely crazy for!). He also gets a drizzle of extra virgin olive oil from time to time.

Why? Vegetables provide some fibre to nourish his gut microbiome, plus a variety of phytonutrients with potential anti-inflammatory benefits.

Louis eats almost every vegetable I offer: cauliflower, carrot, celery, broccoli stems, sweet potato and zucchini (although the latter is more appealing when sardines are involved!). Everything is chopped into small pieces.

And there’s another bonus! 🦷 Crunching on raw vegetables, especially carrots, provides some gentle abrasive action that may help clean his teeth. People often comment on his impressive set of pearly whites! 😁

He also enjoys the occasional fruit treat. Today, he shared some of my orange. Another day it might be a little apple. It’s actually quite difficult not to share whatever you’re eating with a lab! 😂

Some people tell me their dogs won’t eat vegetables. But then I discover they’re cooking premium chicken fillets for them! I’m sure Louis would favour chicken over zucchini too! 😂

The secret? I introduced vegetables when he was young, and he quickly became a veggie boy! 🥕

In fact, a WHOLE carrot is a special treat when I go out and leave him on paw patrol!

It reminds me of raising children. Introduce healthy foods early, enjoy eating them yourself and make nutritious choices the norm at home. You’re helping shape their food preferences for life.

Does your dog eat vegetables? What’s their favourite? 🐶
