I know I don’t shut up about beans BUT this is now your reminder to alsooo, EAT MORE LENTILS! 🫘

Lentils are one of my favorite budget-friendly ways to add more fiber, plant-based protein, and nutrients to my meals! &&&, they’re so easy to make!

Here’s how I make mine:

1. Heat olive oil in a pot over medium heat.
2. Add chopped onions, carrots, celery & garlic. SautΓ© until softened.
3. Add your seasonings and stir everything together.
4. Add rinsed lentils, & water/broth.
5. Bring to a boil, then reduce heat and simmer with the lid closed until the lentils are tender (usually 30ish min)
6. Adjust seasonings to taste and enjoy!

Lentils are great for supporting gut health, digestion, and balanced blood sugar!

Save this for your next nourishing meal! 🫘

Turns out making homemade beans is actually REALLY easy! 😁 It just takes a little patience!

Here’s how to make them:

1. Rinse and sort through your dried beans.
2. Soak overnight (8–12 hours). You can skip this step, but soaking may help make beans easier to digest!
3. The next morning, drain, rinse, and add your beans to a pot with fresh water.
4. Bring to a boil, then reduce heat and simmer with the lid on for about 1 hour.
5. Remove the lid, add salt to taste, and continue simmering for another 1–1.5 hours, or until the beans are soft and tender!

Beans are full of fiber, plant-based protein, and nutrients that support gut health!

Save this for your next pot of homemade beans! 🫘

My current hyper-fixation drink! No seriously… I’ve made this THRICE now. And the best part is….. ANYONE can drink it!

OAT-CHATA is a high fiber horchata-inspired drink I’ve been making during my relactation journey 🍼 It’s creamy, cozy, sweetened naturally, and tastes SO good!

Recipe
β€’ 1 cup oat bran
β€’ 1/2 cup almonds
β€’ 2 cinnamon sticks
β€’ splash of vanilla
β€’ 2 cups oat milk
β€’ 4 cups filtered water
β€’ maple syrup to taste

Instructions:
1. Blend oat bran, almonds, and cinnamon sticks until broken down.
2. Add filtered water, oat milk, vanilla, and maple syrup. Blend again until creamy.
3. Transfer to the fridge and let soak for 8–12 hours for the best flavor.
4. Strain well once 8 hours is complete.
5. Pour over ice, top with cinnamon, and enjoy!

Why I love it:
✨ it’s high fiber
✨ blood sugar friendly pairs perfect a high protein meal
✨ easy calories while breastfeeding
✨ comforting + hydrating
✨ &&&& tastes similar to horchata which has little to no decent nutrients

****This is not medical advice, just sharing what’s been helping me feel nourished during this relactation journey!
