This easy to prep frittata is a perfect make ahead breakfast. Full of protein and veggies, it is as delicious as it is beautiful! Enjoy! * 2 slices turkey bacon, cooked and chopped* 1 large potato, thinly sliced * 2 tablespoons olive oil* 1 ½ cups thinly sliced red onion* 1 ½ cups chopped zucchini* 7 large eggs, beaten* ½ teaspoon salt* ¼ teaspoon ground pepper* 1/4 cup chopped red pepper * ¼ cup thinly sliced fresh basilPlace sliced potato’s in an even layer in a broiler safe pan or cast iron skillet. Place in oven preheated to 400 degrees for 15 minutes until brown. Heat oil in a skillet over medium-high heat. Add onion, red pepper and zucchini and cook, stirring frequently, until soft, 3 to 5 minutes.place vegetables over the potatoes in pan. Place bacon over top.Meanwhile, whisk eggs, salt and pepper in a bowl. Pour the eggs over the vegetables in the pan. Cook, lifting the edges to allow uncooked egg from the middle to flow underneath, until nearly set, about 2 minutes. Place the skillet under the broiler until the eggs are slightly browned, 1 1/2 to 2 minutes. Let stand for 3 minutes. Top with basil.To release the frittata from the pan, run a spatula around the edge, then underneath, until you can slide or lift it out onto a cutting board or serving plate. Cut into 4 slices and serve.

Enjoy!* 1 bunch kale* 1 tablespoon olive oil* 1 teaspoon flaked sea saltPreheat an oven to 300 degrees F. Line a rimmed baking sheet with parchment paper.With a knife or kitchen shears carefully remove kale leaves from the thick stems and tear into bite size pieces.Drizzle kale leaves with olive oil and toss to combine. Spread out in an even layer on the baking sheet without overlapping and sprinkle with salt.Bake until the edges start to brown but are not burnt, 20 to 30 minutes.

The peaches where I live in South Jersey are absolutely scrumptious right now. Take advantage of nature’s sweetness and try this low sugar peach crisp- you won’t regret it!🍑* 4 extra large peaches, diced (or 5-6 medium)* 2 tbsp ) cornstarch* 1 ½ tsp almond extract* 1 tsp ground cinnamon, divided* ¾ cup old-fashioned oats * ¼ cup whole wheat flour or millet flour * 2 tbsp ) pure maple syrup* 2 tbsp unsalted butter, melted1. Preheat the oven to 350°F, and lightly coat an 8”-square baking pan with nonstick cooking spray.2. In a medium bowl, toss together the diced peaches, cornstarch, almond extract, and ¼ teaspoon cinnamon until thoroughly combined.3. In a separate bowl, mix together the oats, flour, and remaining cinnamon. Add in the maple syrup and butter, mixing until completely incorporated.4. Spread the peach mixture into the prepared pan, and evenly sprinkle the oat crumbs on top. Bake at 350°F for 35-45 minutes, or until the peach juice is bubbling and the oat mixture turns crunchy. Cool completely to room temperature. For best results, let the crumble rest for at least 2 hours after coming to room temperature before serving to allow the juices to thicken.

On a recent trip to Arizona I tried hiking for the first time. Although at home I walk and run daily, hiking proved to be a challenge. The terrain was full of hills, twists, turns and rocks along the way. I noticed as I walked along that all o could focus on was the step I was taking at the moment. I was fully present and focused on what was happening in that moment only. This was so peaceful! I am a self admitted over thinker and tend to ruminate on thoughts when I am stressed or anxious. The power of being present in that moment was blissful. This delicious capri chicken is the easiest dish of the summer! Do t skip the balsamic glaze- makes the whole dish! P* 4 chicken breasts* 1 teaspoon Italian seasoning* 1/2 teaspoon garlic powder* 1/2 teaspoon onion powder* salt and pepper* 4 slices mozzarella* 4 slices tomato* 2 tablespoons basil, slicedBalsamic Reduction* 1/2 cup balsamic vinegar* 2 tablespoons light brown sugarSeason chicken breasts with italian seasoning, garlic and onion powder. Sprinkle with salt and pepper on both sides.Spray the skillet with non stick cooking spray and cook the chicken breasts until they are almost fully cooked.Top each chicken breast with a slice of mozzarella. Place under the broiler and allow it to cook for a few additional minutes to melt.Remove the chicken from the broiler and top with tomato and basil. Drizzle with the homemade balsamic reduction. Serve immediately and enjoy!Balsamic Reduction* Add balsamic vinegar and brown sugar to a small saucepan. Simmer for 10 minutes or until the sauce has reduced by half. Keep warm until ready to use.

This corn salad is amazing! Guaranteed to be the hit of any BBQ or party you bring it to. Enjoy! * 6 ears freshly shucked corn* 1 medium green bell pepper, diced* 1 cup cherry tomatoes, halved* 1 bunch green onions, diced* ½ bunch fresh cilantro* 2 teaspoons olive oil, or to taste* salt and ground black pepper to taste* 1 tsp ground cumin * 1/2 fresh lime squeezed 1. Cook corn in large pot of boiling water, immerse for five minute, remove from pot.2. Holding a corn cob over a large bowl, use a knife to carefully slice warm kernels directly into the bowl; discard cob. Repeat with remaining corn.�3. Add bell pepper, tomatoes, onion, cilantro, olive oil, cumin, salt, and pepper; squeeze in lime juice, toss until evenly mixed. Let sit until flavors have blended, at least 30 minutes.

Bring a pot of water to a boil and boil chicken for 10-14 minutes.�* While chicken is cooking, chop parsley and celery.�* Once chicken is cooked, shred the chicken by pulling apart with 2 forks.* Add chopped ingredients, spices, greek yogurt, buffalo sauce, cheese if using and shredded chicken in a bowl.* Toss together using a spatula until all ingredients are thoroughly coated with yogurt.
