MCT is a medium-chain triglyceride (MCT) oil that is more rapidly broken down and absorbed into the body than other oils, making it a quick energy source and less likely to be stored as fat. MCT oil is also a dietary supplement loaded with benefits like increased energy, more brainpower, and fewer cravings. Plus, it makes the perfect no-preservative mayonnaise! Let us know if you plan to try this and be sure to save it for later. Note: to get the correct consistency, you will need an immersion blender. Ingredients 1 egg 1 cup BeBalanced P-100 MCT oil 1 tsp dijon mustard 2 Tbsp apple cider vinegar OR lemon juice Salt and pepper to taste Instructions 1. Place the egg first on the bottom of a close-rimmed container. It is important to ensure that the container barely accommodates the immersion blender, or the mayonnaise will not come together. 2. Add the rest of the ingredients. 3. Place the immersion blender at the bottom of the container, and turn it on. Hold it there until you see the bottom look like mayonnaise, and then very slowly raise it up. Keep blending until you reach the desired consistency. This lasts about 2 weeks in the refrigerator.
